Oven Roasted Pulled Pork
Serves 6 – Preparation time 20 min – Ready in 5 hours
Ingredients
1/2 tbsp ground cumin
1/2 tbs ground coriander
1/2 tbsp. paprika
1 big onion sliced, not to thin
1,5 kg bone-in, skin-on pork butt or shoulder, cut in half
3 tbsp of
Apricot jam
Salt
Fresh black pepper
For the sauce
1 cup packed brown sugar
3 tbsp bottled Sriracha hot sauce
2 tbsp ketchup
1 tbsp apple cider vinegar
1.5 tbsp soy sauce
½ tsp garlic powder
1/2 tbsp onion powder
Mix all the ingredients together and that’s your sauce done!
Directions
Preheat oven to 150 C. Mix cumin, coriander, paprika, 5 teaspoons salt, and 2 teaspoons pepper.
Cover a baking tin with a baking sheet. Place pork on the baking sheet and rub with spice mixture. Then coat the meat with the jam.
Place the onions under the pork. Cover with aluminium foil, crimping edges to seal. Roast until pork shreds easily, 4 to 5 hours.
Shred meat using two forks; discard bones, skin, and fat. Add onions, and pan juices, and toss to
combine. Serve with bread and Sweet-and-Spicy Sauce alongside.
